About the Recipe

Dinner is a time to soften, restore, and deeply nourish. This slow braise blends tender chicken, healing broth, and earthy vegetables in one quiet pot. It's rich in natural collagen and warmth a comforting ritual for body and skin.

Ingredients

  • 2 chicken thighs (bone-in, skin-on)

  • 1 tbsp olive oil

  • 1 small onion, thinly sliced

  • 2 garlic cloves, crushed

  • 1 carrot, cut into thick rounds

  • 1 parsnip or turnip, peeled and chopped

  • 1½ cups collagen-rich chicken bone broth

  • Fresh thyme or rosemary

  • Salt & pepper to taste

Preparation

Step 1


In a heavy pot, heat olive oil and sear chicken until golden, about 4–5 minutes per side. Remove and set aside.



Step 2


In the same pot, add onion and garlic; sauté until fragrant.



Step 3


Add chopped root vegetables and herbs; stir gently.



Step 4


Return chicken to the pot and pour in bone broth.


Step 5


Cover and simmer on low heat for 40–45 minutes until the chicken is tender and the broth is rich.


Step 6


Serve in a clay bowl with a ladle of broth and tender vegetables. Optional: garnish with parsley or lemon zest.
